  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Instructions

  • Whisk together the flour and salt in a mixing bowl.
  • Whisk in the milk and egg until the batter is smooth.
  • In a skillet over medium heat, melt the butter.
  • Pour enough batter into the skillet to coat the bottom and swirl to spread it out.
  • Cook until the edges turn golden brown, then flip and cook for 30 seconds more.
  • Repeat until all of the batter has been used.
  • Heat the olive oil in a separate skillet over medium-high heat.
  • Cook for 5 minutes, or until the sliced mushrooms are browned.
  • Push the mushrooms to the side of the skillet and crack the egg into it.
  • Cook the egg sunny side up, seasoning to taste with salt and pepper.
  • Serve the crepes topped with the mushrooms and egg.
