Instructions

  • Whisk together the flour and eggs in a large mixing bowl.
  • Stir in the milk and water gradually to combine.
  • Whisk in the salt and melted butter until the batter is smooth.
  • Melt butter in a nonstick skillet over medium-high heat.
  • Scoop the batter into the skillet with a 1/4 cup measuring cup, tilting the pan to evenly coat the bottom.
  • Cook for 1-2 minutes on one side, then flip and cook for another 1-2 minutes on the other.
  • Repeat with the rest of the batter.
  • Spread apricot jam over each pancake and top with pine nuts to serve.
  • Fold the crepes in half or quarters and serve.
