Instructions

  • In a medium mixing bowl, combine the flour and salt.
  • Whisk together the eggs, milk, melted butter, sugar, and vanilla extract in a separate bowl.
  • Whisk the wet ingredients into the dry ingredients until smooth.
  • Stir in the almond slices.
  • Brush a nonstick skillet or pancake pan lightly with vegetable oil and heat over medium-high heat.
  • Pour the batter into the skillet with a 1/4 cup measure and swirl to coat the bottom of the pan.
  • Cook each side for 1-2 minutes, or until lightly golden.
  • Rep with the rest of the batter, adding more oil to the skillet as needed.
  • Serve the crepes hot, topped with more sliced almonds and your favourite toppings.
