Apricot Crepes Recipe

These apricot crepes are a tasty variation on traditional crepes. The delicate, thin crepes pair perfectly with the sweet and tangy apricot preserves. They're perfect for breakfast, brunch or dessert.

  • Prep Time: 15 minutes
  • Cook Time: 20 minutes
  • Total Time: 35 minutes

Instructions

  • Combine the flour, sugar, and salt in a large mixing bowl.
  • In a separate bowl, whisk together the eggs and milk.
  • Add the egg mixture to the flour mixture gradually, stirring until smooth.
  • Allow the batter to rest for 10 minutes after adding the melted butter.
  • Heat a 6 inch lightly oiled skillet over medium heat.
  • Pour 1/4 cup of the batter into the skillet, tilting to coat the bottom evenly.
  • Cook for 1-2 minutes, or until the bottom is lightly browned.
  • Cook the pancake for an additional 1-2 minutes on the other side.
  • Repeat until the batter is gone.
  • Roll up each pancake with apricot preserves on top.
  • Before serving, sprinkle powdered sugar on top of the crepes.
