Instructions

  • Whisk together flour, eggs, milk, water, salt, and melted butter in a large mixing bowl until smooth.
  • Melt butter in a nonstick skillet over medium heat.
  • Pour about 1/4 cup batter into the skillet and swirl it around to coat the bottom.
  • Cook until the edges curl and the bottom turns golden brown.
  • Cook for another 20-30 seconds on the other side.
  • Rep with the remaining batter.
  • Spread a spoonful of peanut butter on top of each pancake, then top with a spoonful of blueberry jam.
  • Fold the pancake in half twice to form a triangle and top with chopped roasted peanuts.
  • Serve immediately with fresh blueberries on top.
