Herb Crepes with Wild Mushrooms Recipe

The filling for these savoury herb crepes is a flavorful mixture of wild mushrooms, garlic, and Parmesan cheese. They make an excellent brunch or dinner dish that will not disappoint.

  • Cook Time: 20 minutes
  • Total Time: 40 minutes

Instructions

  • Whisk together the flour, eggs, milk, water, salt, and herbs in a medium mixing bowl until smooth.
  • Melt butter in a nonstick skillet over medium heat.
  • Coat the pan with a small amount of butter.
  • Pour 1/4 cup batter into the pan, tilting it to evenly distribute the batter.
  • Cook for 2 minutes, or until the pancake is golden brown on the bottom.
  • Cook for an additional 1-2 minutes on the other side.
  • Make another 8 crepes with the remaining batter.
  • Melt the butter in a large skillet over medium heat.
  • Cook, stirring occasionally, until the mushrooms and garlic are tender, about 5-7 minutes.
  • Cook for 1-2 minutes, or until the liquid has evaporated, before adding the white wine.
  • Incorporate the heavy cream and Parmesan cheese.
  • Season to taste with salt and pepper.
  • Place a pancake on a plate and spoon some of the mushroom mixture into the centre to serve.
  • Serve the pancake folded over the filling warm.
