Instructions

  • In a large mixing bowl, combine the flour, sugar, and salt.
  • Whisk together the eggs, milk, and melted butter in a separate bowl.
  • Whisk the wet ingredients into the dry ingredients until smooth.
  • Melt butter in a nonstick skillet over medium heat.
  • Pour 1/4 cup batter into the skillet and swirl to coat the bottom evenly.
  • Cook the pancake for about 1-2 minutes, or until the edges begin to brown and the top is set.
  • Cook for an additional 30 seconds on the other side.
  • Stack the cooked crepes on top of each other and repeat with the remaining batter.
  • 1 tablespoon strawberry jam on each pancake, then fold in half.
  • Whip the heavy cream until it forms stiff peaks.
  • If desired, top the folded crepes with whipped cream and more strawberry jam.
