Instructions

  • Whisk together the flour and eggs in a large mixing bowl.
  • Stir in the milk and water gradually to combine.
  • Whisk in the salt and melted butter until the batter is smooth.
  • Melt butter in a nonstick skillet over medium-high heat.
  • Pour 1/4 cup batter into the skillet, swirling to coat the bottom.
  • Cook for 1-2 minutes, or until the edges curl and the bottom is lightly golden.
  • Cook for 30 seconds to 1 minute after flipping the pancake.
  • Repeat with the remaining batter after removing the pancake from the skillet.
  • When all of the crepes are cooked, spread 1-2 tablespoons plum jam on each one and top with chopped mint leaves.
  • Serve the crepes warm, rolled up tightly.
