  • Whisk together the flour, sugar, and salt in a large mixing bowl.
  • In a separate bowl, whisk together the eggs, milk, vanilla extract, and melted butter.
  • Whisk in the wet mixture gradually until the batter is smooth and free of lumps.
  • Melt butter in a nonstick pancake pan or skillet over medium heat.
  • Coat with nonstick cooking spray or butter.
  • Pour a scant 1/4 cup batter into the pan and swirl quickly to cover the bottom.
  • Cook for about 1-2 minutes, or until the edges begin to brown, then flip and cook for another 30 seconds.
  • Stack the cooked crepes on a plate and repeat with the remaining batter.
